Ingredients {about 10 pops}
3 1/2 cups cubed watermelon
Handful fresh mint leaves
3 Tablespoons Agave
1/2 lime
2 oz. light rum
1/2 cup club soda

My simple go-to guacamole recipe:

4 ripe avocados
1/2 red onion, diced
Juice of 3 limes
1/2 tsp salt
1 jalapeño pepper, seeded & diced

Combine & dig in!

On the menu this weekend tonight:

Baked Ricotta Slices with Roaster Peppers, Tomato & Olives
-0.5 cup olive oil
-2 cups ricotta, drained and cut into slices
-salt and pepper
- white sugar (optional)
-1 punnet of cherry tomatoes, sliced
-3 yellow peppers, roasted and skin and seeds removed
-1.5 tbsp dried olives
-4 sprigs thyme
-0.5 tsp dried chilli flakes

Preheat oven to 410 F
Pour 3 T olive oil into pan & place ricotta slices in pan
Season with salt & pepper
Toss tomatoes in 1 T olive oil, season, and scatter over ricotta
Dice peppers, toss in 1 T olive oil and a pinch of salt & sugar, and scatter over ricotta
Top with olives, thyme and chilli flakes
Drizzle with remaining oil & bake for 25 mins or until ricotta is golden on the edges
Serve at room temperature with crusty bread.
